One of my new meal prep favorites is this super simple to make asparagus and spinach soup.
I first made it with just asparagus but I like it much more with the spinach as well.
All you gotta do is blend over cooked/boiled asparagus in a blender with water and raw spinach until you reach your desired consistency.
I like to make mine plain then try different spices with it throughout the week.
My favorite is lemon pepper so far!
I also puréed some chicken and added it in and it was not horrible but also wasn't amazing without doctoring it up a bit more!
I recommend having veggies in every meal and this is such a GREAT and fast way to get more veggies into your diet.
